I had a lot of left over tomato juice from making my chili one time, and came up with this use for it. Just a simple tomato soup you can make.
- Tomato Juice
- Salt
- Pepper
- Italian Seasonings.

- In a large sauce pan bring the tomato juice to a simmer.
- Let simmer for 30 minutes, do not cover.
- Season with salt, pepper and italian seasonings to taste.
- Let simmer 15 mins.

Garnish with Mozzarella Cheese and croutons.
