&lt;P&gt;&lt;FONT color=#ff0000 size=3&gt;&lt;STRONG&gt;SWEET POTATO FRITTERS&lt;/STRONG&gt;&lt;/FONT&gt;&lt;/P&gt;
&lt;P&gt;&lt;FONT color=#000000&gt;1 C flour&lt;/FONT&gt;&lt;/P&gt;
&lt;P&gt;1t baking powder&lt;/P&gt;
&lt;P&gt;1/4t salt&lt;/P&gt;
&lt;P&gt;1/4 C milk&lt;/P&gt;
&lt;P&gt;2 eggs, beaten&lt;/P&gt;
&lt;P&gt;2T butter, melted&lt;/P&gt;
&lt;P&gt;2 C shredded raw sweet potato&lt;/P&gt;
&lt;P&gt;4 slices bacon, cooked and crumbled&lt;/P&gt;
&lt;P&gt;vegetable oil&lt;/P&gt;
&lt;P&gt;syrup (optional, who needs the bad carbs anyway?)&lt;/P&gt;
&lt;P&gt;Combine flour, baking powder and salt; stir well.&amp;nbsp; Add milk, eggs and butter; stir until smooth.&amp;nbsp; Add sweet potato and bacon; mix well.&amp;nbsp; Head 3-4 inches of oil to 375 degrees F in a Dutch oven.&amp;nbsp; Carefully drop batgter by rounded teaspoonfuls into hot oil.&amp;nbsp; Cook only a few at a time so that your oil temperature remains constant.&amp;nbsp; Fry 2 minutes or until fritters are golden brown, turning once.&amp;nbsp; Drain on paper towels.&amp;nbsp; Serve warm with syrup, if desired (again, why bother with the bad carbs).&lt;/P&gt;</description></item></channel></rss>
